A note: this post contains lists of statistics about Archer both useful and useless. It is specifically about the version of him played at
capeandcowl and so leaves out a lot of abilities specific to him as a heroic spirit or Servant, because he got tossed into a regular old human body there. Some of it, in addition, is headcanon extrapolated from vague data in canon, although I'll try to indicate when this is the case. Needless to say, there will be spoilers here.
BASIC STATISTICS OF THE EVERYDAY VARIETY
Name: Shirou Emiya [衛宮士郎]. Not currently in use.
Alias: Archer (his class), heroic spirit EMIYA [エミヤ], Faker (according to Gilgamesh, the King ofDouchebags Heroes)
Age: Physically 32 (a number based on vague comments in official materials about when he made his contract with the world). Mentally...it's skewed because he spent a while after his death in a place with no sense of time.
Height: 187cm (a little under 6'2").
Weight: 78kg (172 lbs). That's the official number, but realistically he should probably weigh at least a bit more.

A note: those crap stats can be explained by the fact that Archer is not a typical heroic spirit who achieved near-godly feats in his life on his own power, but just a particularly tenacious and stubborn human being who sold himself into the ranks of heroic spirits in an act of desperation (notably, the highest one, Mana, is a result of that contract). For a human, these stats aren't bad.

CONCEPTUAL ARMAMENT
Archer's fancy red overcoat is something that's been referred to as a "conceptual armament," made from the holy shroud of a saint. It's noted as not being designed to repel attacks like normal armor, but to "oppose the external environment," whatever that means. My best guess is that it enhances his resistance to stray things surrounding him in battle other than his actual opponent that might otherwise interfere with the fight. The coat was given to him sometime in his twenties by Ciel when he was working as a freelance magus.
BOW AND ARMOR
The black armor that he wears under his coat, and the bow he uses to fire sword-arrows, are both made of an as-yet-unknown, extremely strong material. For the purpose of this game, that just means his armor is really tough, and his bow is strong enough to fire ridiculous sword-arrows. His ability to summon the bow out of nowhere is not, as far as I can tell, projection, but simply a regular old Servant ability--but the 'Porter has let him keep this one.

KANSHOU AND BAKUYA
Archer's favored melee weapons: a pair of twin shortswords based on the ones in this story. Explained in the context of his canon here, they serve his purposes for a number of reasons: they are simple and easy to project, but strong and well-crafted, and their strong connection with each other makes them excellent for dual-wielding.
RHO AIAS
One of the few specifically defensive items Archer is capable of projecting, Rho Aias is a legendary shield from the Trojan War. Its special power is to be an absolute defense against projectile weapons...but since even the practiced version Archer projects is still inferior to the true version, particularly powerful and conceptually significant projectile weapons can still break through it in the end, although those are extremely rare. The power of the shield is such that it takes a truly massive amount of magical energy to maintain, which goes some way towards explaining why he very rarely bothers with it.
A note: Of course, he has any number of other ridiculous legendary things sitting around in Unlimited Blade Works, but he mostly uses the others for Broken Phantasm (see his powers).
